Dr. Prado is passionate about teaching and has received 3 teaching awards throughout her career including the 2016 Teaching Wall of Fame Award from her Faculty.

She is the proud instruction of NUTR 440 - Current Topics in Nutritional Science, a popular course open only to fourth-year students in the Nutrition Major and Honors in Nutrition. Course objectives include:
  • Understand the complexities of nutrient partitioning and body composition with emphasis on macronutrients interactions and biological activity in maintaining metabolism and body functions.
  • Advance knowledge and critical evaluation on the methodological assessment of nutritional status in research and practice, at the individual and population levels.
  • Apply in-depth knowledge to analyze current nutrition issues related to nutrients, nutritional guidelines, food policy, and the impact of nutrition on health.
